About Us
Chef Freddie learned all his culinary talents, when he started working as Chef in 2001 at the St. Regis Monarch Beach in Dana Point. He has worked with several different chefs from around the world, like Master Chef Azmin Ghahreman from Iran, Chef Castan from France & Chef Ross Turnbull from Canada. Freddie says, "Chef Ross is whom I still thank today for taking me to the island of Kauai in 2007, as Chef De Cuisine at the Princeville Hotel. That is where I started to gather all the Hawaiian fusions that helped me create Federicos Fresh Mex Cuisine."

Our Service
Federicos Fresh Mex Cuisine consists of homemade family recipes made from the Heart, which makes our Authentic Mexican Cuisine much more special. Bringing the Authentic Flavors of Mexico and Flavors of Hawaii together is what gives our food that unusual, but delicious flare. Our Cuisine has a universal liking of flavors that everyone will enjoy. Our Fresh Hawaiian fish like, Ahi, Monchong, Opha and Ono are flown in daily from Hawaii and delivered directly to the kitchen. For breakfast try our delicious Ricos Huevos Rancheros with homemade chorizo. Our lunch and dinner menu offer a variety of plates like burritos, tacos, quesadillas, taquitos, ceviche, carnitas and fajitas. Come in and check us out! Our Fish Options
We are also giving you the opportunity to take home fresh fish, for you to cook. You can buy fish by the pound at Market price. Poke! yes you read that right we can make Poke for you. Authentic Hawaiian style Poke made by request and by order, two styles available: Hawaiian Ahi Poke and Spicy Ahi Poke.
