Chef Freddie learned all his culinary talents, when he started working as Chef in 2001 at the St. Regis Monarch Beach in Dana Point. He has worked with several different chefs from around the world, like Master Chef Azmin Ghahreman from Iran, Chef Castan from France & Chef Ross Turnbull from Canada. Freddie says, "Chef Ross is whom I still thank today for taking me to the island of Kauai in 2007, as Chef De Cuisine at the Princeville Hotel. That is where I started to gather all the Hawaiian fusions that helped me create Federicos Fresh Mex Cuisine."
